CaptionIn the spring of 1942, persons of Japanese descent living on the West Coast were evacuated by the US Army into assembly centers while permanent internment camps were built. Camp Harmony, hastily constructed at the Washington state fairgrounds in Puyallup, temporarily housed over 7, 000 residents from Seattle, Tacoma and Alaska.
In order to feed so many, meals were regimented with set times and limited food options. In this photo, a line of cooks stir food in huge pots on stoves in the kitchen.
